Head Sommelier, Arbane**<\/h4>\n\n

In the elegant setting of the Arbane** restaurant, Valentin Gallais, at just 26 years old, embodies this new generation of sommeliers who, with a commitment to excellence and a spirit of curiosity, are driving the revival of Champagne and its terroir. <\/p>\n\n

A native of Normandy, he discovered wine thanks to an uncle who was passionate about it, before going on to specialize in sommelier studies. His experience working alongside leading figures in the industry has fostered his attention to detail, refined his palate, and strengthened his desire to explore wine as a living language that connects the product, the terroir, the winemaker, and emotion. <\/p>\n\n

It was during his first internship at Domaine Les Cray\u00e8res that Valentin truly discovered the hidden treasures of Champagne. This revelation led him, two years later, to take the reins of this exceptional winery. <\/p>\n\n

Chef Philippe Mille recognized his dedication and sensitivity, and subsequently entrusted him with joining him on a new venture: the opening of the Arbane** restaurant.<\/p>\n\n
