Adrien Simon Champagne
Located in Pouillon in the Saint-Thierry mountain range, the estate carries on a tradition that began in the 19th century. Since 2008, Adrien Simon—representing the seventh generation—has been managing the vineyard with the utmost dedication.
On sandy-clay soils, the vineyards are planted with a blend of Meunier, Pinot Noir, and Chardonnay. Committed to sustainable farming practices, the estate has been certified organic since 2024, marking the launch of a new line of wines.
In the cellar, Adrien takes a hands-off approach. The winemaking process (in tanks or barrels) and extended aging on the lees reveal the terroir’s unique character through precise, fresh, and authentic wines.
In 2026, his niece Éloïse, who specializes in wine marketing, joined him. Together, they revitalized the estate by expanding their hospitality offerings and wine tourism to introduce visitors to their world and their champagnes.
