As evening falls, you enter the Chapelle du Carmel to enjoy a dinner designed as a fusion of heritage, cuisine, and togetherness. The table d’hôtes is set in the heart of the nave, surrounded by the chapel’s Gothic vaults and stained-glass windows. In a small group, you’ll watch as a menu conceived by Chef Matthieu Audinot is prepared—a culinary journey in four courses, complemented by carefully paired wines.

Her contemporary cuisine draws inspiration from her experiences in France and around the world. She blends techniques, traditions, and distant influences into a series of creative, generous dishes that highlight the ingredients. Throughout the dining experience, you’ll discover the flavors, techniques, and pairings that make up the dinner, all in an atmosphere that encourages conversation.

More than just a meal, Le Banquet du Carmel offers a moment suspended in time at a venue usually reserved for exclusive stays and private events. You’ll enjoy an intimate evening, limited to 12 guests, where fine dining harmonizes with the venue’s history and the spirit of camaraderie that defines Les Relais du Goût.

Matthieu Audinot

A native of Reims and the son of a family of culinary professionals, Matthieu Audinot has developed a contemporary culinary style inspired by his experiences working with renowned chefs and his travels around the world.

Curious and creative, he crafts inspired dishes in which various influences blend subtly. His cooking remains free-spirited and generous, guided by a respect for the ingredients and the joy of sharing.

Dating back to the 19th century, the Chapelle du Carmel is a historic religious building that has been transformed into a truly exceptional venue.

Beneath its Gothic vaults and remarkable stained-glass windows, it offers a setting imbued with serenity and elegance.

Usually reserved for exclusive stays and private events, it opens its doors exceptionally during the Relais du Goût.
