The star of petit fours, the macaron is as fascinating as it is intimidating. For two hours, you’ll step into the precise and indulgent world of pastry with Alistair Smith, France’s Best Apprentice and Junior World Pastry Champion. In a small group, you’ll follow the key steps in making macarons and observe the techniques that make all the difference: preparation, technique, mastery of textures, and tips for making them.
Alistair shares his professional insights with you, drawn from his training at the École Ferrandi and his experience working with leading pastry houses. This workshop will help you understand the key challenges of this iconic pastry—which is often intimidating to amateurs—and leave you with practical tips to help you improve.
In the intimate setting of the Airbnb guesthouse—whose address will be shared only with participants—you’ll enjoy a special experience limited to 8 people per session. The experience concludes with a tasting of the creations, paired with a glass of Pol Couronne Champagne, to further explore the connection between pastry-making expertise and the art of Champagne.

Alistair Smith
Named France’s Best Apprentice and Junior World Pastry Champion, Alistair Smith trained at the École Ferrandi and then at renowned establishments such as Fauchon, Le Bristol, and Le Pré Catelan and the Plaza Athénée. A winner of the 2024 Junior World Pastry Cup with the French team, he was named to Forbes France’s “30 Under 30” list in 2025.
