Following up on the contest held during the festival, pâté en croûte takes center stage at Sunday’s Grande Tablée in the village of Les Relais. Maxime Cresson will be presenting the recipe he entered during his second appearance at the World Pâté en Croûte Championship: a generous filling made with pork, Champagne poultry, chorizo, pistachios, and duck foie gras, accented with a Champagne ratafia jelly. This specialty can be enjoyed on its own or as part of a full-course meal featuring several products from the Marne region. A Nominettes salad, made with pasta crafted by Christophe Nomine using his own flour, offers a vegetarian alternative. To finish, a Tarte Tatin-style tart showcases apples from La Cueillette in Aulnay-sur-Marne. A friendly lunch in the heart of the Village des Relais du Goût, designed to extend your exploration of the local producers and winemakers.

Maxime Cresson, Executive Chef at Grand Office, trained with several caterers Meilleurs Ouvriers de Francespecializing in artisanal charcuterie and catering before continuing his career at the Royal Champagne Hotel & Spa, alongside Chef Jean-Denis Rieubland. Together, they have competed twice in the World Pâté en Croûte Championship , An experience that has honed his mastery of this iconic specialty of French cuisine. Today, he champions a traditional style of cooking in which technique, precision, and the quality of ingredients play an essential role.
