Guided by Paulina Sanders, you’ll learn about its history, techniques, and safety rules before performing the ritual yourself.

The bottle, once opened, is then served during a tasting paired with cheeses or sweet-and-savory dishes, depending on the time slot you choose.

With the Sabrage Experience, you’ll step into the world of champagne through a gesture that is at once spectacular, precise, and deeply rooted in the Champagne region’s cultural heritage. Led by Paulina Sanders, the workshop begins with an introduction to the history of sabrage, its techniques, and the essential safety rules for performing it. You’ll then be guided step by step through the process of performing your own sabrage in a contemporary setting in the heart of Reims.

Once opened, the bottle of winemaker’s champagne becomes the starting point for a tasting experience built around carefully selected pairings. When you make your reservation, you’ll choose one of the two experiences offered: Bubbles & Cheeses, featuring three aged local cheeses, or Sweet & Savory, featuring three creations that combine sweet and savory flavors. Each pairing highlights a different aspect of the champagne—its textures, aromas, freshness, intensity, and balance.

This small-group experience combines cultural heritage, expertise, and the pleasure of tasting. You’ll leave with memories of a rare experience, the joy of a shared moment, and a deeper appreciation of champagne pairings.
